Welcome to Clara’s Kitchen
Summer is one of my favorite times of the year in the kitchen. Fresh produce is abundant, gardens are full, and simple meals made with seasonal ingredients bring so much color and flavor to the table.
This week on Clara’s Menu, we are combining fresh summer cooking with our freezer preparation system. We will enjoy lighter meals using seasonal vegetables while also adding three new freezer meals to make future busy days easier.
A prepared kitchen is not about spending all day cooking. It is about creating simple routines that help meals come together more easily.
This Week’s Goals
This week, we are focusing on using fresh summer produce, adding more variety to our freezer, and creating meals that are both nourishing and practical. We will add our first pork freezer meals, include a hearty vegetarian option, prepare simple snacks, and continue building kitchen systems that make everyday life easier.
Before You Shop
Before heading to the grocery store, take a few minutes to check your pantry, refrigerator, and freezer. Look for ingredients you already have, produce that needs to be used soon, and freezer meals that should be moved toward the front.
Check for staples such as rice, pasta, oats, canned beans, broth, seasonings, frozen vegetables, nuts, peanut butter, cheese, and yogurt. Using what you already have helps prevent waste and keeps grocery shopping simple.
Grocery List
This week’s shopping list is filled with fresh summer ingredients including tomatoes, cucumbers, zucchini, yellow squash, peppers, corn, green beans, lettuce, fresh herbs, avocados, berries, peaches, apples, lemons, garlic, and onions.
For protein, we are adding pork tenderloin, chicken, eggs, Greek yogurt, cottage cheese, black beans, and chickpeas. We will also need a few pantry items, including whole-wheat tortillas, pasta, brown rice, salsa, tomato sauce, crackers, and cheese.
Sunday Prep & Restock
A little preparation at the beginning of the week makes the days ahead run much smoother. This week Clara is washing and preparing fruits and vegetables, cooking brown rice, roasting summer vegetables, preparing snack containers, and organizing the freezer meals.
The goal is not to create more work. The goal is to make the kitchen work better for you.
This Week’s Menu
We begin the week with Berry Almond Overnight Oats, Chicken Salad Lettuce Wrap, and Summer Vegetable Chicken Pasta filled with zucchini, tomatoes, peppers, and herbs.
Tuesday brings Garden Vegetable Egg Muffins, Cucumber Tomato Chickpea Salad, and Pork Tenderloin with Roasted Summer Vegetables. The extra pork will be used later in the week, helping one ingredient stretch into multiple meals.
Wednesday’s menu includes Peach Yogurt Parfaits, Turkey and Avocado Wraps, and our first new freezer meal — Vegetarian Black Bean Enchilada Casserole. This flavorful casserole is packed with beans, vegetables, tortillas, salsa, and cheese. It is a great reminder that freezer meals can be just as satisfying without meat.
Thursday features Whole Wheat Banana Pancakes, a leftover Pork Tenderloin Salad Bowl, and Lemon Herb Chicken Rice Bowls with brown rice, vegetables, and fresh herbs.
Friday starts with Peanut Butter Banana Toast and Summer Pasta Salad before dinner brings our second freezer meal — Pork Carnitas Bowls. Adding pork gives us another delicious option when planning future meals from the freezer.
Saturday includes a Veggie Omelet, Fresh Garden Salad with Grilled Chicken, and our third freezer meal — Chicken Parmesan Stuffed Shells. This comforting meal will be ready for a future evening when time is limited.
We finish the week with an Overnight Breakfast Casserole, a Fresh Fruit and Cottage Cheese Plate, and Grilled Vegetable Flatbread Pizza using the fresh ingredients we have enjoyed throughout the week.
Freeze This Week
This week we are adding three new meals to Clara’s freezer collection: Vegetarian Black Bean Enchilada Casserole, Pork Carnitas Bowls, and Chicken Parmesan Stuffed Shells.
Each meal is labeled with the name and date before being added to the freezer. A well-organized freezer gives you options and provides peace of mind on busy days.
Healthy Snack Ideas
Summer makes healthy snacking simple. Fresh fruits and vegetables are already nature’s convenience foods. This week’s snack ideas include frozen yogurt berry bites, apple slices with peanut butter, cucumber slices with hummus, cottage cheese with peaches, homemade granola cups, hard-boiled eggs, and vegetable cups with ranch dip.
Healthy Dessert Ideas
A summer dessert does not need to be complicated. Fresh peach crisp, berry yogurt bark, chocolate banana freezer bites, and grilled pineapple with cinnamon are simple treats that feel special yet fit into a balanced lifestyle.
Clara’s Tip of the Week
Create a “Use First” basket in your refrigerator.
Choose a small basket or container for ingredients that need to be used soon. Before planning your meals each week, check this basket first. This simple habit helps prevent food waste, keeps your refrigerator organized, and saves money.
A peaceful kitchen is not created through perfection. It is created through small systems that make everyday life easier.
